We are currently looking for an Executive Chef to lead our culinary operations across all food outlets, including breakfast service, the Beach Restaurant, Doors to Zanzibar, room service, banquets, and two staff-only restaurants.

Key Responsibilities

Team Management and Leadership

  • Organize and manage the kitchen staff’s schedules, task allocations, and HR follow-ups.
  • Adapt to the diverse demands of management, clients, and changing activity levels.
  • Lead by example to maintain team motivation, cohesion, and performance.
  • Provide ongoing training and development, fostering a culture of learning and growth.
  • Address and resolve conflicts or operational challenges within the kitchen team.
  • Participate in recruitment and integration of new kitchen staff.
  • Ensure compliance with Zanzibar’s labor laws.
  • Proactively solve problems and streamline kitchen operations.

Culinary Excellence

  • Develop creative and high-quality culinary offerings in line with management’s vision.
  • Create and design innovative menus for all food outlets.
  • Master cooking techniques, food preparation, and seasoning to ensure premium quality.
  • Update menus based on seasonal ingredients and changing guest expectations.
  • Maintain cost control by adhering to predefined budgets for each dish.
  • Manage kitchen inventory, ensuring the efficient use of resources and minimizing waste.
  • Ensure compliance with HACCP (Hazard Analysis and Critical Control Points) food safety standards.
  • Implement and uphold a food safety management plan.
  • Maintain cleanliness and hygiene standards across all kitchen areas.
  • Oversee uniform standards and staff grooming to reflect the resort’s luxury image.
  • Manage kitchen equipment, materials, and maintenance to ensure smooth operations.

Guest Relations and Service Excellence

  • Engage with guests, creating memorable culinary experiences and building customer loyalty.
  • Monitor and respond to guest feedback, ensuring high levels of satisfaction.
  • Oversee event planning and execution, ensuring smooth service and culinary quality.
  • Collaborate with commercial teams to ensure the culinary offerings align with guest expectations.
  • Track food cost and ensure efficient kitchen operations for maximum profitability.
