We are currently seeking an experienced and dynamic Executive Chef to join our esteemed team in the heart of Tanzania’s Serengeti National Park. The ideal candidate will have a proven record as a Head Chef in a five-star hospitality setting, with expertise in international cuisines such as French, Italian, or Grill. This role offers a once-in-a-lifetime opportunity to live and work in one of the world’s most exceptional safari destinations, where you can create unforgettable culinary experiences in a truly inspiring environment.
As the Executive Chef, you will oversee all aspects of kitchen operations to ensure the highest standards of food quality, presentation, and service. Working closely with the Food & Beverage Director, you will drive our culinary vision by developing sustainable, innovative, and locally inspired menus that delight our guests. This leadership role requires a proactive individual skilled in training, mentoring, and managing a diverse kitchen team in a challenging yet rewarding setting.

Main Responsibilities
- Consistent Quality: Ensure every dish is prepared and presented to consistently high standards.
- Menu Planning: Develop and plan menus by considering factors such as product availability, service costs, market conditions, and guest numbers, all while adhering to our pricing policy.
- Pricing Strategy: Set daily menu prices that contribute to profitability and assist with menu design, printing, and distribution.
- Staff Scheduling and Payroll: Prepare and post employee work schedules based on operational forecasts and budget targets, and compile daily payroll reports.
- Food Preparation Oversight: Supervise cooking methods, portion sizes, garnishing, and presentation to maintain our quality benchmarks.
- Supply Coordination: Manage the ordering of food supplies and kitchen equipment, ensuring all items meet our quality standards and cost controls.
- Team Leadership: Hire, train, discipline, and organize kitchen personnel while providing regular performance evaluations and supporting career development.
- Team Meetings: Conduct regular meetings with kitchen staff and participate in broader management meetings.
- Work Environment: Foster a fair, safe, and motivating work environment that enhances morale and minimizes turnover.
- Special Functions: Collaborate with the Food & Beverage Director to plan and execute special events, managing additional costs and staffing requirements.
- Sanitation and Cleanliness: Ensure the kitchen complies with Four Seasons’ sanitation standards, maintaining impeccable cleanliness and organization.
- Equipment Maintenance: Supervise the upkeep and cleanliness of all food preparation equipment.
- Quality Control Systems: Implement systems to guarantee consistent quality and portion control.
- Purchasing and Presentation: Create purchasing specifications, monitor operating criteria, and review food presentations, making recommendations for improvements as needed.
- Stewarding Coordination: Oversee the stewarding department in collaboration with the Executive Steward.
- Cafeteria Management: Ensure that the employee cafeteria offers high-quality, diverse menu options.
- Effective Communication: Work closely with the purchasing department to secure timely deliveries of top-quality products.
